Perfect Roly Poly Dumplings

The secret to superb light dumplings in to steam them on top of a simmering liquid.

1. Use a large wide pan and have enough liquid in the pan so there's ample room for the dumplings to expand.

2. Dip a spoon into the simmering liquid then into the batter to scoop up a rounded spoonful.  Drop this batter into the liquid.  Repeat until dumplings are just touching.

3. Immediately cover and don't lift the lid until the recommend cooking time is up.  When dumplings look fluffy, insert a wooden pick into the center.  If it comes out clean, they're done.

4. Give new life to bland dumplings by stirring in chopped fresh basil, dill or tarragon, grated cheese or chopped whole green onions.
