Ingredients


1 tbsp. butter
4 thinly sliced eye of round steaks (about 12 oz.)
Freshly ground black pepper
1/4 cup brandy
1/4 tsp. Worcestershire sauce
Pinch of salt

Brandied Eye of Round


Melt the butter in a large frying pan.  Do not scrimp on the butter.  Place the steaks in the pan.  Add a generous grinding of pepper.  Cook the meat for 2 min. over med. heat.  Then, turn the steaks and add another generous grinding of pepper.  Cook for 2 more min.  Remove to a platter and cover to keep warm.

Add remaining ingredients to the pan.  Bring to a boil, stirring to remove any brown bits from the bottom of the pan.  Boil for 1 min.  Pour sauce over the steaks and serve.
