Ingredients



12 oz. pkg. frozen chopped spinach
1 tsp. butter 
1 tbsp. finely copped shallots OR
1/2 crushed garlic clove
1/4 cup regular or light sour cream
1 tbsp. freshly squeezed lemon juice
Generous pinch of salt

Sumptuous Spinach



Place the spinach in boiling water and cook just until the spinach can be separated, about 3 min.  Drain very well and squeeze out all the liquid.

Melt the butter in a large frying pan.  Add the shallots and stir for 2 min.  Stir in the spinach and remaining ingredients.
