Ingredients


1 lb. lean ground beef
1 med. onion, chopped
3 lrg. cloves garlic, pressed
1 12 oz. can whole tomatoes
1 quart beef stock or bouillon cubes
1 cup uncooked macaroni
1 med. zucchini, diced
1 10 ox. pkg. frozen, mixed vegetables
1 15 oz. can kidney beans
1 tsp. oregano leaves
1/2 tsp. basil
1/2 tsp. thyme
3 tbsp. red wine vinegar
Salt and pepper to taste
Grated parmesan or romano cheese

Ground Beef Minestrone


Brow meat, onion and garlic in a heavy bottomed soup pot.  Add tomatoes and bring to a boil.

Reduce heat and simmer, uncovered, for 15 min. breaking up tomatoes with a spoon.

Add stock and bring to a boil.  Add macaroni and reduce heat; simmer, uncovered, for 10 min. 

Add zucchini, mixed vegetables, beans, seasonings and vinegar.  Simmer, covered, 10 min. and add salt and pepper to taste.

Serve with grated cheese.
