Ingredients

2 tbsp. margarine
1 small onion, thinly sliced
1/2 cup leek, thinly sliced
1/2 cup celery, thinly sliced
1 1/2 cups mushrooms, thinly sliced
3 cups chicken broth, skimmed
1/2 cup potatoes, thinly sliced
1/2 cup 15% cream OR plain yogurt
Salt and pepper to taste.

 Cream of Mushroom Soup

Melt the margarine in a saucepan over high heat and cook the onion, leek, celery and mushrooms slowly.

Add the chicken broth and stir, then add the potatoes and let simmer for 15 min. on med. heat.

Puree in an electric mixer or with had mixer.

Add the cream and season to taste.  Pour and serve.
