Ingredients

2 tbsp. butter or margarine
2 tbs. chopped green pepper
2 tbsp. chopped onion
2 tbs. all purpose flour
1 cup tomato juice
1 tsp. salt
1 tsp. sugar
1 tsp. Worcestershire sauce
1 tbs. catsup
1 tbs. chopped Parsley

Yields: 1 1/4 cups
 
 

 Tomato Sauce

Melt butter or margarine is saucepan
Add  Green Pepper and chopped Onion

Cook, stirring  constantly, for 5 minutes

Blend in flour

Add: 
Tomato juice, salt, sugar, Worcestershire sauce, and catsup

Cook, stirring constantly, until thickened.

Stir in chopped parsley

Season to taste. If a smooth sauce is desired, strain to remove green pepper and onion, and omit the parsley. 

Serve with deep fried fish, meats or vegetables
