Ingredients



2 tbs. butter or margarine
2 tbs. all purpose flour
1/2 tsp. salt
Few grains pepper
2 chopped or sliced hard cooked eggs
1 tsp. Worcestershire sauce.
1 1/4 cup milk
 

Yield: 1 Cup

Egg Sauce
(Medium Sauce)


Melt in saucepan over low heat, butter or margarine

Blend in: flour, salt, pepper and paprika, 
Stir until smooth. Remove from heat. 

Gradually blend in: 1 cup of milk, add eggs, and Worcestershire sauce

Return to direct medium heat and stir constantly until smoothly thickened. Season to taste.

Serve with: Poached fresh or smoked fish, croquettes or toast.

To keep hot, cover and place over simmering water. 

NOTE:
For a thin Cream Sauce, decrease butter and flour to 1 tablespoon each.  For a thick Cream Sauce, increase the butter and flour to 1/4 cup.
