Ingredients
2 tbs. butter or margarine
2 tbs. all-purpose flour
1/2 tsp. salt
Few grains pepper
Few grains paprika
1 cup milk
1/2 cup shredded old Cheddar cheese, or
3/4 cup diced process cheese
1 tsp. Worcestershire sauce
Yield: 1 cup

Cheese Sauce
Melt in saucepan over low heat,
butter or margarine
Blend in:
Flour, salt, pepper and paprika
Add: cheese of your choice.
Stir until smooth. Remove from heat.
Gradually blend in :
1 cup of milk
Return to direct medium heat and stir constantly until smoothly thickened.
Season to taste.
Use with vegetable, chicken, seafood or in casserole dishes.
To keep hot, cover and place over simmering water..
NOTE:
For a thin Cream Sauce, decrease butter and flour to 1 tablespoon each.
For a thick Cream Sauce, increase the butter and flour to 1/4 cup. |
