Ingredients


10 potatoes
1 tsp. salt
1/4 to 1/2 cup milk
1/2 cup butter
1/2 cup sour cream
2 tsp. grated onion
Freshly grated nutmeg 
Salt and freshly ground black pepper

Whipped Potatoes


Peel the potatoes.  Cut them in half and place them in a saucepan with the salt.  Cover generously with cold water.  Bring to a boil.  Cover and simmer until the potatoes are tender, about 20 min.  Drain off the water.  Return the pan to the burner and shake the pan until the potatoes are very dry.  

Meanwhile, heat 1/4 cup milk and remaining ingredients together until warmed through.  This will help to keep the potatoes fluffy.  Put the warm milk mixture and the potatoes in the large mixing bowl of and electric mixer.  Whip them until light and creamy, adding another 1/4 cup milk, if necessary.
