Marvelous Mashed Potatoes


Here are some tips to keep you whipped potatoes light and heavenly.

1. Always heat the milk and butter before gradually adding to the potatoes. 

2. Whip with a potato masher or and electric mixer.  (Food processors turn potatoes into a thick, gluey mixture.)

3. For fluffier potatoes, use an up and down motion with a potato masher, instead of a stirring action, to incorporate more air.

4. Instead of traditional butter and milk, consider stirring in chopped sun dried tomatoes, light sour cream, chopped basil, grated cheese or garlic oil.
