4 pork chops, cleaned and trimmed (4 oz. each)

Preheat the oven to 350 degrees. Sear both sides of the pork chops in a frying pan with the olive oil; set aside on an oven ready platter. In the same frying pan, brown the onion, mushrooms and pepper for 5 min. Pour onto the pork chops. Again, in the same frying pan, add the tomatoes and the remaining ingredients. Bring to a boil and pour over the meat. Cook in the oven for about 1 hour, bushing the pork chops with the sauce frequently while cooking.
