Ingredients


1 cup raw cranberries
1 small unpeeled, seedless orange, cut in 2" chunks
1 1/2 cup flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/8 tsp. ground cinnamon
1/8 tsp. ground allspice
1 egg
1/2 cup 2% mild
2 tbsp. unsalted butter, melted

Cranberry Orange Muffins


Preheat oven to 400 degrees.  Places cranberries in food processor fitted with a steel blade; coarsely chop; remove cranberries and set aside.

Places orange in food processor and process until pureed; set aside.

In a med. bowl, sift together flour, sugar, baking powder, baking soda, salt, and spices.  In a small bowl, beat together egg, milk and melted butter.  Stir the cranberries, orange puree and egg mixture into dry ingredients, just until combined. 

Butter or spray 12 muffin cups; spoon in batter.  Bake about 25 min. or until a toothpick inserted in the center comes out clean.
