Preheat oven to 400 degrees. Places cranberries in food processor fitted with a steel blade; coarsely chop; remove cranberries and set aside. Places orange in food processor and process until pureed; set aside. In a med. bowl, sift together flour, sugar, baking powder, baking soda, salt, and spices. In a small bowl, beat together egg, milk and melted butter. Stir the cranberries, orange puree and egg mixture into dry ingredients, just until combined. Butter or spray 12 muffin cups; spoon in batter. Bake about 25 min. or until a toothpick inserted in the center comes out clean. |
