Moist Chicken

The fasted route to moist chicken for tossing is a salad or sandwich making is to "poach" it in a microwave. 
Arrange the thick meat portions of the chicken pieces toward the outside of a microwave safe dish.
Cook, uncovered for 7 to 8 min. per pound, regardless of the number of piece.
Turn halfway though cooking.
Cover and let stand for 15 min. 
Skin and cut into bite size pieces.
