Ingredients



1/4 cup wild rice
2 1/2 cups unsweetedned apple juice
Ground pepper, to taste
1 green apple, cored, peeled, seeded and finely diced
2 tbsp. fresh parsley, chopped
4 chicen medallions
10 oz. commercial white sauce
1/3 cup 35% cream

Chicken Medallions with Apple



Combine the wild rice with the apple juice in a microwaveable measuring cup.  Season to taste, cover and cook on High, for 50 min.

Drain the wild rice, setting aside the juice; add the diced apple and parsley to the rice, athen season and set aside.

Place the chicken on a microwaveable plate, cover and cook on High for 10 min.  Add the apple juice that had been set aside, along with the white sauce and the cream.  Cover with plastic wrap and cook on Med. for 15 min.

Remove from the microwve and let sit for 10 min. before serving with the wild rice and apples.
