Lamb Chops with Red Wine Tarragon Sauce

 

After cooking 4 lamb chops in a frying pan, remove and add 1/4 cup dry red wine or port, 1 tsp. Dijon mustard and 1/2 tsp. dried tarragon to the pan.  Stir over med. heat and scrape up brown bits from the bottom.  Pour over chops.
