Ingredients


Crusts:
3/4 cup lukewarm water
1 tsp. granulated sugar
1 pkg. (1 tbsp.) dry yeast
2 cups all purpose flour
1/4 tsp. salt
2 tbsp. vegetable oil

Topping:
7 1/2 oz. can tomato sauce 
1 tsp. dried leaf oregano
1 tsp. dried basil
1 cup grated Monterey Jack or Swiss cheese (about 3 oz.)
1/3 cup freshly grated Parmesan cheese
4 oz. piece pepperoni

Prep Time: 20 min.
Standing Time: 15 min.
Baking Time: 10 min.

Mini Pizzas


To Prepare the crust, pour the lukewarm water into a medium size bowl.  Stir in the sugar until dissolved.  Sprinkle the yeast over top.  Do not Stir.  Let stand at room temperature until the yeast is foamy, about 10 min.

Meanwhile, place the flour and salt in a food processor fitted with a metal blade.  Whirl until blended.  Set the flour mixture aside in the processor bowl.

When the yeast is foamy, add the oil.  then, stir with a fork until evenly blended.  With the food processor running, slowly add the yeast mixture to the flour mixture just until the dough starts to form a ball.  Don't worry if you don't use all the yeast mixture.

Remove the dough and place it on a lightly floured surface.  Knead for 5 to 8 min. until the dough feels satiny.  Place the dough in a greased bowl.  Cover with waxed paper and damp cloth.  Let the dough stand for 15 min.

Then, preheat oven to 400 degrees.  Place the dough on a lightly floured surface and roll it out with a heavy rolling pin until it is about 1/4 thick.  Cut out rounds with a 2" cookie cutter.  Place the rounds on a lightly greased baking sheet.  Roll out remaining scraps of dough and cut into rounds.

To Prepare the topping, stir the tomato sauce with the herbs until evenly blended.  Spread 1 tsp. sauce onto each round.  Sprinkle each with about 1 tsp. grated Monterey Jack cheese, followed by 1/2 tsp. freshly grated Parmesan cheese.

Baking in the center of the preheated oven for 8 to 10 min. or until golden.

While the pizzas are baking, thinly slice the pepperoni.  As soon as the hot pizzas are removed from the oven, press a slice of the pepperoni into the top of each pizza.  (If the pepperoni is cooked on theses small Pizzas, they will become greasy.)  Serve immediately.  Or cover and refrigerates or freeze and heat in a 350 degree oven for 8 to 10 min. or in a microwave.
