Store nuts in the refrigerator or freezer.  They have a high fat content that quickly goes rancid at room temperature.  Always taste before buying, if possible, and definitely before using; some nuts, particularly walnuts, go rancid very quickly.  There's not need to defrost; use straight from the freezer.
