When serving a whole salmon, hot or cold, it's always nice to provide at least one sauce. Here are some easy stir together. 1. Stir 2 tsp. finely grated lemon peel and 1 tsp. each of honey and Dijon mustard into 1 cup light sour cream or yogurt. Then, stir in chopped fresh chives, dill or basil. 2. Coarsely grate half and English cucumber. Squeeze out the moisture. Stir with 2 tbsp. chopped fresh dill and 1 crushed garlic clove into 1/2 cup plain yogurt. 3. Stir 3 tbsp. melted butter with 2 tbsp. freshly squeezed lemon juice, 1 tbsp. capers and 2 tbsp. snipped chives. 4. Blend 1 tsp. ground cumin and 1/2 tsp. ground coriander into 1 cup sour cream. Then, stir in as much chopped fresh coriander as you like. 5. Stir 1/4 cup chopped fresh dill and 1 tbsp. Dijon or honey mustard into 1 cup plain yogurt. 6. Stir 1/4 tsp. dried dill weed into 1/2 cup sour cream. Recipes from Chatelaine Cook Book |
