Ingredients



1 tbsp. olive oil
2 fish steaks, such as halibut, at least 1" thick 
1 cup flavorful meatless spaghetti sauce
1 tsp. basil pesto

Preparation Time 5 minutes
Baking Time 15 minutes

Makes 2 Servings

Roasted Fish Steaks with Tomatoes and Pesto



1. Preheat oven to 500 degrees. Pour oil into a 9" pie plate and turn fish in oil until coated. Pour spaghetti sauce around fish. Spread 1/2 tsp. pesto on top of each fish steak. Place a piece of foil loosely over top. Bake in center of  oven for 15 minutes, stirring sauce every 5 minutes. Serve with rice and a vegetable sauté.
