Fast Salmon Steak Suppers


Here's a catch of easy ways to bring salmon steaks to the table. Use 1" thick steaks for each recipe.

Dijon Cream
Preheat oven to 425 degrees.  Place 4 salmon steaks on a baking sheet and bake, uncovered, for 5 min. Stir 1/2 cup sour cream with 1 tsp. Dijon mustard and 1/2 tsp. dried dill weed.  Spread over the steaks  Continue baking, uncovered, for 5 min.

Barbecued Spicy Cajun
Stir 1 tsp. chili powder with 1 tsp. ground cumin and 1/2 tsp. each of cayenne pepper and garlic poweder.  Brush both sides of 6 steaks with vegetable oil and generously sprinkle with seasonings.  Barbecue or broil 5 min. per side.

Lemon and Fresh Herbs
Place 4 steaks, 1/4 cup white wine and 1 tbsp. lemon juice in a med. size frying pan.  Cook, covered, over med. low heat for 5 min.  Turn and sprinkle with 1/2 cup fresh dill or basil.  Cover and continue cooking for 3 to 5 min.

Easy Oriental
Whisk 3 tbsp. teriyaki sauce with 1 tbsp. vegetable oil, 1 tbsp. Dijon mustard, 1/4 tsp. ground ginger and 1 crushed garlic clove.  place 4 to 6 salmon steaks on a broiler pan or barbecue grill.  Brush with the sauce. Broil for 5 min.  Turn and brush with more sauce.  Broil for 5 more min.
