Ingredients


1 lb. dried soup beans
1 ham bone
1 cup left-over ham
2 tsp. salt
1/4 tsp. pepper 4 potatoes, diced
1/4 cup chopped onion
1 tbsp. parsley

Old Fashioned Bean Soup


Soak the beans in water over night..
In the morning, drain.
Cook with ham bone for several hours in one or two quarts of water
When beans are nearly soft, add the meat, seasonings, potatoes, onion, and parsley.
Simmer until potatoes are soft.
