Ingredients



2-9" pastry shells, unbaked
1 cup sugar
2 tbsp. butter
Grated rind and juice of lemon
2 eggs beaten
3 tbsp. flour
1 cup, less 2 tbsp. King syrup
1 cup cold water

To Make Sweet Dough
1/2 cup light brown sugar
1/4 cup lard
1 egg, beaten
1 cup flour
1 tsp. baking powder
2 tbsp. milk

 Lemon Strip Pie



To Make Lemon Filling:
Cream together the sugar and butter.
Blend in lemon and rind and juice, eggs and flour.
Gradually add the molasses and cold water.
Set aside until the sweet dough is made.

To Make Sweet Dough:
Cream together the sugar and lard.
Blend in the beaten egg.
Add the flour and baking powder which have been sifted together.
Lastly add 2 tbsp. milk.
Roll dough, half at a time, on floured board to size of pie and cut into strips one inch wide.
Pour lemon liquid into pastry lined pans.
Placed strips over liquid bit do not cross them.
Bake 30 min. at 350 degrees.
