Ingredients

1 cup sugar
1 tbsp. butter
2 eggs
2 tbsp. flour
Grated rind and juice of 1 lemon
1 cup milk
1 unbaked 9" pastry shell

 Lemon Cake Pie

Cream together the sugar and butter.
Stir in the beaten egg yolks, flour, grated rind, lemon juice and milk.
Fold in the stiffly beaten egg whites.
Pour into the unbaked pie shell and bake for 10 min at 450 degrees.
Reduce temperature to 325 and bake for 20 min. more.
