Ingredients


1/4 cup rice
1 cup water
2 cups milk
2 eggs, separated
3 tbsp. sugar
1/8 tsp. salt
1 tsp. vanilla
4 tbsp. sugar 

 Rice Pudding
(with Meringue)

Put rice and water in top of double boiler for about half hour until rice swells and is dry.
Add milk and keep over the boiling water for another five min.
Meanwhile beat egg yolks with salt and sugar.
Pour some of the hot milk over beaten yolks and mix well.
Return egg and milk mixture to rest for hot milk and cook over direct medium heat until creamy.
Add vanilla.
Pour into greased baking dish and top with meringue made by beating egg whites with 4 tbsp. sugar until very stiff.
Put in 325 degree oven for 20 min. to brown meringue.
Chill before serving.
