Ingredients


1 cup butter
1 1/2 cup sugar
1 egg
1/2 tsp. vanilla
1/2 tsp. lemon extract
2 1/4 cups sifted all purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 cup undiluted Carnation Evaporated Milk
1 tbsp. grated lemon rind

Crisp Lemon Wafers


Cream butter with 1 cup sugar until light and fluffy.  (Save 1/2 cup sugar.)  Beat in egg, vanilla and lemon extract.  Sift dry ingredients together.  Add dry ingredients alternately with Carnation to sugar butter mixture.  Chill about 2 hours.  

Roll rounded tsp. of dough into balls.  Mix 1/2 cup sugar and lemon rind.  Roll balls in sugar.  Place on baking sheet 2" apart.  Bake in moderate oven 350 degrees for 8 to 10 min. or until lightly browned.  Cool on cake racks.
