Ingredients


1 1/2 cups raw cranberries
1/2 cup packed dark brown sugar
1/2 cup chopped almonds
2 eggs
1/2 cup sugar
1/2 cup unsalted butter, melted
2/3 cup flour
1/4 tsp. ground cinnamon

Cranberry Almond Pudding


Preheat oven to 350 degrees.  Butter or spray a 1 qt. baking dish.  Arrange cranberries on bottom; sprinkle with brown sugar and almonds.

Using electric beaters, beat eggs for 1 min. then slowly beat in sugar.  Continue beating unit thick and lemon colored.  Add butter, flour and cinnamon; mix until just combined.

Pour batter over cranberries; bake for about 45 min. or until a tooth pick inserted in the middle comes out clean.  Let pudding cool a few min. before serving.  Best served warm with vanilla ice cream.
