Ingredients


3 (1 oz.) squared bitter sweet or semisweet chocolate
1 1/2 cups all purpose flour
2 tbsp. cocoa
1/2 tsp. baking powder
1/4 tsp. salt
1 cup butter, at room temperature
1 cup granulated sugar
3 eggs
1 tsp. vanilla

Chocolate Pound Cake


Preheat oven to 325 degrees.  Grease a 9x5x3" loaf pan.  Melt the chocolate in the top of a double boiler or in the microwave. (See Tips Section for Melting.) Measure the flour, cocoa, baking powder and salt into a small bowl.  Stir well with a fork until all the ingredients are evenly distributed.

In a large mixing bowl, beat the butter until creamy.  Add the sugar and beat until light and fluffy.  Beat in the eggs, 1 at a time, beating well after each addition.  beat in the vanilla, then the melted chocolate.  Scrape down the sides of the bowl occasionally.  Stir in the flour mixture all at once, beating just until moistened.

Pour the batter into the prepared pan.  Smooth the top and bake in the center of the oven until a cake tester inserted in center of the cake comes out clean, about 50 min.  Cool the cake in the pan set on a rack for 10 min.  Then invert it onto the rack and cool completely.
