1 cup all purpose or whole wheat flour

Preheat oven to 325 degrees. grease 2 cookie sheets and set aside. Prepare the dry ingredients by measuring first the flour, then the baking soda, salt and cinnamon into a large bowl. Stir together with a fork until well blended. Then, place the butter in a large bowl. Stir, preferabley with a wooden spoon, until creamy. Gradually stir in the sugars. Then. add the egg. milk and vanilla. Stir vigorously until well mixed. Gradually stir in the flour mixture until combined. Stir in the oatmeal, then raisins, chocolate chips or nits, if using. Form giant cookies by placing 1/4 cup dough on the cooke sheet. Wer you hands and press the dough into a 4 or 5" round, 1/4 to 1/3 " thick. Place the next mound of dough at least 4" from this one and repeat. Bake in the centre of the oven for 12 to 15 min. until the edges are a light golden color but the center is still soft. Remove to a rack to cool. |
