Ingredients


8 chicken breasts, bone in
1 cup hot salsa
1/2 cup white wine
3 tbsp. olive or vegetable oil

Southwest Chicken


Preheat oven to 375 degrees.  Remove the skin from the chicken and arrange pieces in a 9x13" pan, trying not to overlap them.  In a small bowl, stir the salsa with the wine and oil.  Pour evenly over the chicken.  

Bake, uncovered, in center of the oven until the chicken feels springy to the touch, about 45 min.  Baste the chicken at least every 15 min. to keep it moist.
