Ingredients

1 thawed boneless skinless chicken breast cut in 1/2
8 ounce can tomato sauce
1 small clove garlic, minced
Italian flavored bread crumbs
Salt, pepper, basil (to taste)
Grated mozzarella cheese
Water

 Chicken Parmesan

Pound fat part of breast to flatten slightly. 
Object is to make uniform in thickness. 
Rinse well in water, sprinkle with salt and pepper, than dip in crumbs. 
Spray pan with a spray oil like Pam. 
Brown on both sides beginning with top. 
Add about 3 tbs.  water, cover and simmer about 10 min. 
Add tomato sauce, minced garlic, basil and salt and pepper to taste. 
Simmer 15 min. more. 
Sprinkle with cheese cover and remove from stove. 
Let stand 5 min. 
Serve with thick slices buttered bread or garlic toast and a salad.
