Fast Fix Carrots
Creamy Cumin
Toss 2 cups cooked sliced carrots with 1/2 cup sour cream and 1/2 tsp.
ground cumin.
Serves 4
Light Oriental
Sauté 2 cups grated carrots with 1 crushed garlic clove, 1 tsp.
soy sauce, 1 tsp. granulated sugar and 1/2 tsp. lemon juice.
Serves 4.
Italian Salad
Toss 3 cups grated carrots with 1/4 cup Italian salad dressing and
1 tsp. capers.
Serves 6.
All Spiced
Drain 2 cups cooked sliced carrots. Return the carrots to pan
and add 1/2 cup orange juice and 1/4 tsp. allspice. Sauté
until the juice is syrupy.
