Hot 'n' Tangy Black Beans



For a fast side dish with lots of dash combine a chopped red pepper, a chopped onion, 1 tbsp. chopped jalapeno pepper, 1/2 tsp. dried leaf thyme and 2 tbsp. olive oil in a 6 cup (1.5L) microwave safe dish.

Heat in the microwave, covered, on high for 3 min.  Stir in 3 cups cooked black beans and 1 tbsp. lime juice.  Heat, covered, on high for 2 min. or until the beans are hot. 

Great with chicken.
Serves 4 to 6.
